L’Œuf Cannage at Royal Monceau Raffles Paris: a high-flying creation
As Easter approaches, Le Palace unveils a creation as precious as it is poetic: the Cannage Egg. Much more than a simple delicacy, it is a true collector’s item, where craftsmanship meets contemporary creativity. This unique piece tells a story of gesture, patience and mastery, brought to life by the imagination of Pastry Chef Yazid Ichemrahen and his Executive Chef Alexandre Favre.
An inspiration that spans the centuries

L’Œuf Cannage is inspired by the traditional techniques of caning and basketry, ancestral arts reinterpreted in a modern vision of design. Sculptural and meticulous, each detail reflects the precision of the human hand, the precise gesture that has been found for centuries in craftsmen’s workshops. Here, chocolate becomes matter, thread and structure, recalling the beauty ofexceptional craftsmanship and the poetry of repeated gestures.
A unique taste experience

Beneath its shell of 62% Passionato dark Caribbean chocolate from Chocolaterie de l’Opéra lies a gourmet heart of contrasting textures. Breton shortbread praline, delicately spiced with fleur de sel, mingles with tender caramel and shortbread chips. Each bite offers a subtle balance between melt-in-the-mouth and crunch, intensity and sweetness, transforming tasting into a suspended, sensory moment.
Combining emotion and technique

L’Œuf Cannage embodies theavant-garde DNA of Le Royal Monceau – Raffles Paris. More than an object to be savored, it becomes an emotional experience, where technical mastery combines with the poetry of gesture. A creation to be contemplated, offered or savored, revealing the talent and creative freedom of the Palace’s pastry chefs.
