Balcon: Julien Sebbag’s new rooftop bistro at Galeries Lafayette Haussmann

After five years of Créatures, Julien Sebbag opens a new chapter on the roof of Galeries Lafayette Paris Haussmann. Name? Balcon. A perched bistro imagined as a declaration of love to the Paris of zincs, generous plates and big tables with friends.

From May 2026, this new address will take its place on the department store’s famous rooftop, with a spectacular view of Parisian monuments. Here, the atmosphere is more bistro than destination restaurant: free and cool, perfect for any time of day. Breakfast facing Paris, lunch in the sun, cocktails at golden hour (our favorite time of day) or dinner under the lights of the capital… Balcon aims to become the new rendezvous of the Parisian summer.

On the plate, Julien Sebbag revisits French classics with his very own touch: mimosa egg with black garlic, leeks with elderberry vinaigrette, onglet with pepper sauce, coquillettes with truffles or chocolate-pistachio profiteroles. Fresh, regressive, seasonal cuisine designed for sharing.

In terms of décor, Balcon takes up the codes of the “Parigot” bistro, with raw materials, woven chairs and a simple yet elegant atmosphere. A terrace suspended above Paris, where you come as much for the view as for the energy of the place.
