Time Out named this queer saloon in the Marais the best aperitif in Paris 2026

ParisSelect - Ce saloon queer du Marais vient d'être sacré meilleur apéro de Paris 2026 par Time Out

On Tuesday April 21, 2026, Time Out’s editorial team presented its annual awards at a ceremony at the Parc des Princes. Among the 14 awards, the one for the best aperitif in Paris particularly caught the eye. A brand-new address in the Marais district won the coveted gold medal.

Le Coyote: the queer saloon named best aperitif in Paris

On stage, Marine Gora received her award, accompanied by her team of cowboy boots. After years at the Gramme 3 café-cantine on rue des Archives, the chef reinvented herself as a cowgirl. Within the same walls, she opened Le Coyote, the new queer saloon in the Marais.

Opened last autumn, it operates as a coffee shop during the day. Then, after dark, it transforms into a cosy wine bar. The minimalist Western décor is immediately appealing: swinging doors, fringed lampshades, horseshoes here and there.

The playlist oscillates between pop, indie rock and country. It’s easy to see why this place was voted best aperitif in Paris this year.

Inspiration from Montreal

Marine Gora confided to Le Monde that she drew her inspiration from the Montreal dive bar Spaghetti Western. She discovered the place last summer during a trip. The chef then reappropriated the masculine codes of the country bar.

“A lesbian landmark and LGBTQIA+ safe place in the heart of Paris.”

Le Coyote welcomes queers and their allies in a friendly atmosphere. The space becomes a refuge for the community, while remaining open to the curious.

The art of the Coyote aperitif: day or night

During the day, the Coyote’s mini kitchen offers a coffee-style menu. Regulars come to sip an American-style milkshake or a comforting “cow-girl grog”. The refreshing Iced Coyotea is also a popular choice.

Leaning against the bar, we treat ourselves to a convivial snacking session. Soft-boiled eggs sit alongside homemade granola and choco cookies with fleur de sel. As for the Cowboy sausage roll, it’s sure to delight even the hungriest of palates.

  • American-style milkshake – creamy and generous
  • Cow-girl grog – perfect for warming up
  • Iced Coyotea – ideal for hot weather
  • Cowboy sausage roll – the signature snack
  • Chocolate chip cookies with fleur de sel – irresistible

Once the sun goes down, the candles light up. The Coyote becomes a neighborhood wine bar that focuses on quality. From the plate to the glass, everything is meticulous.

A cuisine of varied influences

The chef offers a cuisine with diverse influences, between Tex-Mex and Vietnamese touches. Small plates are eagerly shared with forks and friends. This conviviality is part of the DNA of the best aperitif in Paris.

The menu features a flat snack based on gildas, cheeses or crudités. Yellowtail crudo with kumquat brings freshness and finesse. Pork ribs with homemade buffalo sauce can be tasted with your fingertips.

The dessert deserves a special mention: the millionaire peanut shortbread named Helena Peabody’s Dream Cake. This nod to the diva of The L Word will delight fans of the series.

Natural wines and creative cocktails to accompany your Paris aperitif

To accompany these tasty dishes, Coyote relies on natural wines. Most of the keels come from independent winegrowers. This committed choice reinforces the identity of the place and its coherence.

The creative cocktails are also worth a detour for this unusual Paris aperitif. The Cherry Bomb combines bourbon, cherry syrup, lemon and raspberry. Its balance of sweetness and acidity is immediately seductive.

The Michelada is a favorite among regulars. This drink combines lager, lemon, Maggi, Tabasco and Tajin. Its pep and character make it an ideal way to start the evening.

Le Coyote is located at 86, rue des Archives in the 3rd arrondissement. Monday to Friday, doors open at 5.30pm. On weekends, you can get there as early as 12:00. Closing time is midnight each evening.

With a score of 4.3 out of 5, the address has already won over its first regulars. The title of best aperitif in Paris awarded by Time Out should attract even more curious onlookers. Le Coyote has not finished making a name for itself in the Marais.
