This is the bold challenge taken up by Yannick Alléno and Aurélien Rivoire with their house Alléno & Rivoire, by installing a chocolatier in action at the very heart of their Parisian boutique. A demonstration of countertop gastronomy to be discovered at 9 rue du Champ de Mars (Paris 7e).

Here, we don’t just sell chocolate: we make it in front of you. In a deliberately open setting, the chocolatier becomes a showman. Customers witness the precise, measured gesture, observe the transformation and can even personalize their order. Each creation is made by the minute, guaranteeing absolute freshness.
Taste first
True to his philosophy, Yannick Alléno places culinary excellence at the heart of the experience. The duo went so far as to replace sucrose with birch bark extract, lowering the glycemic index to 7 from 70 without sacrificing flavor. The result? An innovative, healthy and intense chocolate. The Chefs insist: under 48 hours, the chocolate molecules continue to evolve, revealing unprecedented aromas.
Alléno & Rivoiren, an infinite palette of creations
Specialties include trèfles sauciers, fruit confits, Terroirs de France plates, vegetable meringues, and even ephemeral creations. All inspired by the chef’s signature sauces.
A boutique, a manifesto
Alléno & Rivoire offer not just products, but a vision of chocolate: sensory, conscious and contemporary. The boutique becomes a place of exchange and transmission, almost a gourmet haute couture workshop.
