On the rooftop of Galeries Lafayette, Julien Sebbag transforms the restaurant Créatures into a contemporary bistro called BALCON.
A new gourmet address is about to take up residence on the rooftops of Paris. Chef Julien Julien Sebbag is transforming the Créatures restaurant into a contemporary bistro called Balcon, perched on the rooftop of Galeries Lafayette Paris Haussmann. This culinary metamorphosis promises an authentic yet modern experience from May 2026.
A gastronomic renaissance at the summit of Paris

After five years of vegetarian creations with Créatures, Julien Sebbag is radically changing course. The new Balcon concept retains the same prestigious address but adopts a totally different culinary philosophy. This high-altitude bistro pays homage to French tradition while infusing it with a bold modern touch.
The name evokes those little Parisian balconies made of zinc and wrought iron. However, diners will discover a vast 140-cover outdoor terrace, offering a breathtaking view of the capital’s emblematic monuments. This reinterpretation of the traditional bistro is part of a renewal process that preserves the soul of French gastronomy.

The chef’s ambition remains clear: to create a living space accessible at all times of the day. From 10 a.m. to 1 a.m., this new spot will welcome breakfast lovers as well as night owls looking for a late dinner. The average bill ranges from 27 euros for a quick meal to 35-40 euros for a more complete experience.
Balcon: A menu celebrating French terroir

The cuisine on offer is generous and easy to understand, with an emphasis on seasonal produce. French bistronomy classics sit alongside more daring creations such as mimosa egg with black garlic or leeks with elderberry vinaigrette. This approach satisfies both the nostalgic and the adventurous.
The chef gives pride of place to vegetables, with spring asparagus and summer heirloom tomatoes. Regressive dishes also find their place, with coquillettes with truffle and parmesan or chocolate-pistachio profiteroles. Each plate tells a story, the story of French cuisine reinvented with subtlety.
Brutalist decor for an authentic bistro feel
The interior design revisits the codes of the classic Parisian bistro with a contemporary approach. Raw materials interact with burgundy and bottle-green woven chairs, creating an atmosphere both familiar and sophisticated.
The decor team chose furniture that evokes traditional Parisian zincs. Marble tables sit alongside more modern elements, creating a harmonious dialogue between tradition and modernity. Subdued lighting in the evening lends the place an intimate atmosphere conducive to conversation and sharing.
The terrace offers different atmospheres at different times of the day. In the morning, umbrellas protect you from the sun while allowing you to admire the exceptional panorama. In the evening, strings of lights create a warm atmosphere that enhances the night-time view of illuminated Paris.
Gourmet moments for every taste
From 10 a.m. onwards, the breakfast menu offers simple formulas with traditional baguette, butter and jam. Freshly baked viennoiseries round off this gourmet offering to get the day off to a good start.
The lunch break attracts local professionals and visitors to Galeries Lafayette. Quick-order formulas let you enjoy a quality meal without sacrificing your schedule. Daily specials vary according to arrivals and the chef’s inspiration, guaranteeing freshness and originality:
