This frozen custard bar in the 15th arrondissement hides a collab with Berthillon’s grandson
Paris is currently living in scorching heat, and Parisians are looking to cool down by any means necessary. This year, a bakery in the 15th arrondissement is hitting back with a creation that blends French pastries with frozen treats. The frozen flan bar has just made its appearance in the capital, and it’s really changing the game.
Paris&Co, the Parisian flan specialist
For over a year, the Paris&Co bakery at 4, rue de la Convention in the 15th arrondissement has been offering a unique concept every Sunday: a flan bar. Dozens of flavors are available by the slice, both classic and original.
Traditional flavors such as vanilla, chocolate and pistachio are joined by more daring creations: peanut, matcha, taro, strawberry and crème brûlée. What’s more, the bakery has won the title of Best Flan in Paris 2021, confirming its seriousness.
In the spring, Paris&Co had already surprised its customers with fruit jelly flans. This summer, the brand has taken its inventiveness one step further.
A new address for every season
Paris&Co’s strength lies precisely in its ability to reinvent itself. The brand is not content to offer the same recipes over and over again. On the contrary, it adapts its offer to the seasons, to keep up with the desires of the moment.
As a result, regulars always have a good reason to come back. And for summer 2026, there’s a big surprise in store.
“If we can’t take a trip to the beach whenever we like, we fall back on Paname’s most gourmet frozen delights.
The frozen flan bar: an original collaboration
For the past few days, Paris&Co has been offering a brand-new creation: the frozen flan bar. For this project, the bakery has teamed up with ice cream maker Lionel Chauvin, head of Enzo et Lily.
The name isn’t chosen at random. Lionel Chauvin is the grandson of the famous Berthillon, the absolute reference in Parisian ice cream. So, behind this flan glacé lie two exceptional areas of expertise.
- The Paris&Co bakery has won the title of Best Flan in Paris in 2021.
- Glacier Lionel Chauvin is the grandson of the famous Berthillon.
- Frozen flan is available every day, without waiting for Sunday.
- Paris&Co also has an address at 49, rue de la Gaîté in the 14th arrondissement.
- The recipe blends bakery ingredients, cream, milk and eggs, all run through a turbine.
To create this dessert, Lionel Chauvin mixes bakery ingredients with cream, milk and eggs. The mixture is then run through a turbine to obtain an ice cream, which is then garnished with puff pastry. The result is fresh, original and mastered from A to Z.
A recipe thought through to the last detail
The frozen flan bar retains the spirit of the house: multiple flavors, generous portions, artisanal quality. The flaky pastry adds crunch, while the ice cream provides the freshness you’re looking for in the middle of a heatwave.
What’s more, the flavors come in all shapes and sizes, in line with what Paris&Co has been offering since it opened. Each bite reflects the work of the two artisans involved.
