Nestled just steps from the Republic Square, in the Marais, Guefen stands as the first Parisian gastronomic address in the Israeli chef Ohad Amzallag. For more than 25 years, he has worked in the catering field, including 17 years as a highly renowned chef in the greatest restaurants in Israel.

With Guefen, Ohad Amzallag wishes to surprise his customers with a cuisine that is characterized not only by its richness, but also by its delicacy in each dish on the menu. Besides, fish of the sea et garden plants stand out at the heart of this bold card. The Chef works the fish as well as the fermentation with respect for the products and a constant search for aesthetics and perfection!

2 distinct universes, 2 unique experiences, but only 1 watchword: the sharing. As soon as we cross the threshold, a large marble table invites you to settle down. Whether alongside a stranger or a loved one, the main thing is to be together. A little further, at the back of the restaurant which stretches out in length, lies the second room: the Chef's table. Facing the open kitchen, 5 seats maintain the link between the host and his guests. They will watch with admiration the gestures of chefs in the kitchen, will gaze at the jars of fermented products and let themselves be intoxicated by the delicious smells that tickle their taste buds.

Each region of the globe finds its place on the plates. From the Middle East to Eastern Europe via the Arabian Peninsula. In this whirlwind of bold but perfectly orchestrated flavors, complex dishes sit alongside simpler, more comforting, thus offering a varied palette of taste pleasures.

The chef highlights the treasures of the sea as well as fermented vegetables and plants, like the oyster cream, granita with mint, chili and Koshu. This is also the case for lobster and agnolotti with ricotta, spinach and sage cream. And finally the irresistible cheesecake accompanied by its caramelized garum… What a delight!
