First of all the appetizer. A delicate chaplain of Saint-Jacques with the scent of yuzukoshō, accompanied by shiso for a touch of freshness. The first entry presents a Sériol carpaccio, sublimated by olive oil, sesame and Tobiko marinated in wasabi. Afterwards, the second entry offers a pan-fried Périgord foie gras, served on a bed of vinegared rice. Garnished with julienned beets and wild pansy petals, this dish harmoniously combines the flavors French and Japanese.

Le first main course offers sole gudgeons in a soy butter sauce, on puff pastry and mashed spinach. Then, thesecond main course presents a Charolais beef steak cooked at low temperature. Finally, for dessert, an “All in chocolate” concludes the culinary experience, with a coffee cream, tonka bean chocolate quenelles and a cocoa cream.
