Voted best pastry chef in the world, chef Pierre Hermé invites us this year on a sensory journey. Orchestrated in collaboration with the Italian visual artist Gianpaolo Pagni. Under the evocative title of “Destinations», its 2023 Christmas collection is adorned with geometric shapes and geographical maps. Thus offering a colorful gourmet journey!

The Infiniment Citron log from Pierre Hermé Paris highlights all the subtleties of the small citrus fruit. This creation combines lemon shortbread and delicate whipped cream. But also a lemon jelly, a biscuit imbued with lemony freshness, and slightly candied touches of lemon. The talented pastry chef of L’Éclair de Génie unveils his irresistible Malmö teddy bear through an exclusive creation called “Malmö fait dodo”, a log that celebrates gluttony in all its facets. The little dark chocolate bear rests delicately in a bed of almond biscuit, wrapped in an airy Madagascar vanilla ganache, enhanced with a subtle crunch of praline and pecan nuts, all enhanced by a soft salted butter caramel. A new taste wonder in perspective!

In the evocative shape of a child's bed symbolizing the dream of Christmas, this delicious log reveals an exquisite marriage. A flourless Genoa bread type biscuit. A chocolate mousse, a pear jelly and finally a creamy vanilla mousse. A subtle creation that promises to delight all cocoa lovers.
