Datil: The restaurant that moves the lines

Recently starred by the Michelin Guide last March, the young chef Manon Fleury presents her Parisian restaurant, Datil, in the magazine “ Special Envoy“. A restaurant which is made up of a 100% female team.

A delicious starred restaurant which is ecologically committed by highlighting agriculture and food production… This may seem usual. But what really distinguishes Date from other gastronomic establishments, it's good its exclusively female brigade in the kitchen.

Since his opening in September 2023, Datil advocates benevolent management in a field still largely dominated by men. Manon Fleury, the boss, says she wants to promote female talents within her team. In this brigade, only one man, Louis Copans, works indoors. He describes the work atmosphere as “ a little intimidating, but super stimulating"

Today, the world of cooking suffers from a blatant lack of women behind the stove. Despite obtaining Manon Fleury's first star, only 11% of female chefs were rewarded this year. On the 62 addresses distinguished by the Michelin guide, alone 6 were held by women.

« Now that we have a star, we also have a duty to set an example. That of showing that it is possible. We wish all the women on our team to be able to open their own restaurant one day and get a star“, insists Laurène Barjhoux, Datil's chef.

Datil goes beyond the simple status of 100% female restaurant. Indeed, he embodies a true ecological commitment by favoring partnerships with local producers, market gardeners, breeders as well as fishermen who respect a responsible approach of food.

Inspired by the seasons and climatic conditions, the brigade's cuisine unfolds in harmony with natural cycles. Each dish is born from close collaboration with their suppliers, giving life to authentic and tasty creations!

On the plate, let yourself be seduced by the four-course tasting menu at 65 euros, accompanied by a selection of four glasses of wine for 45 euros. At dinner, immerse yourself in an immersive culinary experience with the seven-course tasting menu at 120 euros. It is thus enhanced by a food and wine pairing in six glasses at 65 euros. So, will you fall for these dishes?
